Pressing with full destemming immediately after the grape harvest, and in a very gentle way to minimize the possibility of the must being dyed by the phenolic components responsible for the color of the reds. The fermentation of the clean must took place in a small stainless-steel tank at a controlled temperature of 16ºC (61 ºF) to preserve all aromas and freshness..
