Total destemming followed by gentle crushing into a small stainless-steel vat, where it has been macerated for 24 hours under controlled temperature. The must fermented together with the skins and the seeds, using the skin maceration technique, in order to extract color, tannins and secondary aromatics compounds, thus increasing the complexity of the wine.
