Manual harvest. Pressing with full destemming, followed by gentle crushing, with skin maceration for 10h at a temperature of 8ºC. Half of the wine fermented in stainless steel tanks and the other half in new 400L French oak barrel. After the fermentation, we made battonage the barrels and also in the tank for 5 months.
