ABOUT THE WINE
Total destemming followed by gentle crushing into a small stainless-steel vat, where it has been macerated for 10 hours at a temperature of 8ºC (46ºF). After pressing, the must decanted for 48 hours, under controlled temperature. The clean must fermented 30% in stainless steel vats and the rest in 400L second year French oak barrels, with gentle stirring of the fine lees.
