Pressing with full destemming, followed by cooling and decanting at 122C (54 2F). The fermenting process was held in small stainless steel vats under controlled temperature of 16°C (61 2F), in order to preserve all the flavours and freshness.

Citrus yellow color. Intense aroma with notes of pear and pineapple and light floral notes. The palate is very fresh, with a lively acidity and a medium finish.
